OVEN BAKED HALIBUT

SERVES 4

Ingredients:

• 4 pieces of halibut – snapper or kingfish will work well too
• 2 Tbsp butter, melted
• 1 tsp crushed garlic
• 1/4 tsp smoked paprika
• Salt and pepper to taste

Method

1) Preheat oven to 180°C.
2) In a small bowl mix together the butter, garlic, smoked paprika, salt and pepper.
3) Lightly oil a glass or ceramic dish. Place the halibut pieces in and pour over the butter mixture.
4) Cover with foil and bake for eight minutes. Remove the foil and bake for a further two minutes and remove from the oven. Your cooking time will vary depending on the thickness of your fish fillet. Your fish is cooked when opaque and cooked through.
5) Serve the fish on a bed of rice, drizzle over any remaining butter mixture. This also goes nicely accompanied with a garden salad. ENJOY!
